A healthy recipe to try on your Sunday morning: carrot patties with a fresh banana-cranberry smoothie. Vegetable-fruit power!

All sorts of vegetable patties is something my mom loves to make for morning meal…♥♥♥  At a closer look, this simple vegetarian dish is a rather smart choice, – vegetables will provide you with vitamins and microelements, eggs with proteins and energy and, most importantly – breakfast is indeed the best time of the day to eat fried goodies :)

You can use zucchini, beetroot, carrots, or potatoes, anything goes. However, an additional benefit from using carrots is the abundance of vitamin A they can provide, which, by the way, can only be absorbed in your body with the help of some healthy fat – like olive oil on which you will fry your patties!


TAKE: 2 large or 3 small carrots, one egg, basic flour (2-3 tbsp.), garlic (2pc), salt, pepper and some olive oil;

DO: grate the carrots (drain some juice out of the grated mass), add an egg, (in my case I used 2 egg whites and one yolk), flour, salt and pepper; squeeze or grate in some garlic, if you like it as much as I do. Mix all carefully and start frying awesome patties one by one on a beforehand heated pan with a drop of oil: place a portion of carrot “dough” on the pan with a spoon and flatten it from top a little to make a nice round patty :)

Serve with sour cream or yogurt!


TAKE: 3 small or one large banana, a handful of frozen cranberries, and some sweet treat (I had some mango, you can use persimmon or whatever is available)

DO: cut – blend – shake – no mercy

I never was a fan of smoothies – could not get what the fuss was all about… Well, turns out, it is a matter of a good blender! When the blender is good – a smoothie (or a shake) ends up being equally mixed, delicious and fluffy, tastes and feels terrific!
