Not-at-all-healthy but very tasty and SUPER easy to make cacao-coffee biscuit! Perfect for a modest birthday celebration:)
TAKE: 250ml (125g) of flour, 300ml (280g) of sugar, 2 tsps of baking powder, 1-2 tbsps of cinnamon, 1 tsp of vanilla sugar, 2 tbsp of cacao powder, 100 ml of warm coffee, 3 large eggs, 150g of butter.
DO: mix dry ingredients together. It’s good to sift flour and other dry ingredients through a sieve or colander, this way they will mix nicely and lumps will not dare to appear. Melt butter, cook coffee and whip eggs. Slowly stir eggs in the dry components, add warm coffee and melted butter and mix the dough until it becomes even and of gorgeous brown color. Consistency should be similar to the liquid yogurt. Prepare your baking dish, use baking paper or a layer of butter with breadcrumbs as bedding for the cake. Pour the mixture into the baking form and use your finger to eat whatever left on the bowl sides ;) Bake for 40-45 min at 180 degrees. Do not open the oven door when baking! I decorate it classically with sugar powder on top, but you are free of course to come up with your own topping and frosting.
