Please welcome lemon-coconut-rahka-casserole. Rahka, in Finland, is a blended cottage cheese.

This awesomeness was introduced to me by my Dear friend Valeria. She can cook lots of delicious stuff, but this one I truly loved for its easiness and healthy ingredients!

TAKE: Rahka ( Quark, Творог, Cottage cheese blended) 500g, 1 large egg, zest of 1 lemon, juice of half a lemon, 150ml of coconut milk, 3tbls of semolina, 3-4 tbls of coconut flakes, 3-5 tbls of sugar, 1tsp vanilla sugar, and a handful of raisins if you are raisins’ fan.
DO: mix all carefully in the bowl, taste it – should taste sweeet:) Bake for about 40 min under 200 degrees  until a nice golden crust appears on top. When ready take it out from the oven and let it cool down completely – right from the oven it will be liquid, so do not try and eat it right away.
**But DO take it out of the oven after 40-45 minutes or it might end up being too dry. It is best to cook it in the evening, store in the fridge overnight and enjoy in the morning with a cup of hot beverage!
